Well I can try and remember but I honestly kind of winged this one. Right...please bear in mind were a research centre so lots of mouths to feed which means the quantities are quite high,
6 sweet potatoes 4 cups of finely diced mushrooms 2 large onions finely diced 2 large carrots finely diced 2 peppers finely diced 2 cups of tvp (optional I often don't have it 1 cup of blended sun-dried tomatoes 2 cups quinoa cooked & blended but not mushy 2 cups of chickpeas canned 1 head of celery finely diced 2 cups of walnut bits 2 cups of flaxseed ground or oats 3 table spoons of smoked paprika 3 table spoons of cumin 3 table spoons pepper 3 table spoons sea salt 2 table spoons poultry seasoning 2 table spoons of Montreal steak spice (optional it's Canada so we can get it) Any of your favourite spices will do.
Slice sweet potatoes in half & place face down on a well oiled and seasoned tray with the spices above. Cook at 350 until they're soft when you poke them, leave to cool.
Lightly sauté the veggies and season.
Peel skin of the sweet potatoes they'll come off really easily once cool.
Save the skins and blend them with your quinoa, sun-dried tomatoes, & chickpeas. This acts as a type of glue.
Once veggies are slightly cooked, combine with the sweet potatos, add all over ingredients and kneed with your hands until you can form stiff balls. If you need to add more oats, flaxseed to get desired consistency do so. Keep tasting & add more spices if required.
Once you're happy with your mix, line your loaf pans, or cake tins with parchment paper & load stuff them with the mixture. Freeze the ones you don't need. One should feed atleast 6 hungry vegans.
Cover the exposed part with a good smear of ketchup & cook for about 40 mins on 350/400.
Carefully turn out your loaf onto another baking pan and smear ketchup on the remaining sides & sprinkle with peacans. Or another nut of your choice.
Serve with roased veggies & vegan gravy.
